Spiced Simple Syrup

A delicious blend of vanilla, cinnamon, and cloves for cocktail making.

Here’s another spiced infusion for use in exotic Tiki drinks. (You’ll find there’s a goodly variety of spiced concoctions employed in the genre if you do any research into Tiki drink recipes.) This one starts with a basic simple syrup recipe and adds vanilla, cinnamon, and cloves for a delicious and versatile flavored syrup. Easy to make, too. If you can heat something in a saucepan you can make this – it ain’t rocket science, folks!

4 oz superfine sugar
4 oz water
3″ cinnamon stick
3/4 tsp whole cloves
1/4 vanilla bean, split lengthwise

To make the simple syrup, mix together the water and sugar in a saucepan and bring to a simmer, stirring until the sugar is completely dissolved. Remove from heat and add the spices, steeping for at least 30 minutes. Strain into an airtight container when cool and store in the refrigerator.

Syrup will keep 3-4 weeks in the fridge.

Use in Tiki drinks or other cocktails or libations (flavored lattes spring immediately to mind, for one) as called for.
