Hops and soda may not sound like an obvious combination at first; usually hops provide both bitterness and flavor, and bitterness is not something most of us expect when we think of soda. The obvious solution to that is to feature only the flavor essence of the hop, and that’s exactly what the Proper Soda Company has done in this offering.

That still leaves a lot of room for interpretation; anywhere from cloyingly sweet with intense hop flavor to light, crisp and refreshing. And the only way for your chronicler to know the answer to that question, Dear Reader, is to try one. (Like Merlin said in Excalibur, “Looking at the cake is like looking at the future, until you’ve tasted it what do you really know? And then, of course, it’s too late.”)

My can dated best by 8/20/2016. I pop the top and pour over crushed ice and take a sip (and Merlin says “Too late!”). So on with the review!

Crystal clear appearance like club soda, seltzer water, or any typical lemon-lime soda.

Mild aroma of floral hops and sugar syrup.

Seltzer water character with mild sweetness and light floral note from the hops. Carries a gentle mineral flavor through the middle, then some citrus zest makes a brief appearance. No bitterness. The hop flavor is restrained, and the sweetness is dialed way down, making for a very light and refreshing beverage. Definitely a more modern craft take on soda.

I have to think this could make a great mixer for cocktails, too, vodka or gin being my first thoughts for the spirit base.
